It is often said that the best way to select a chef’s knife is to simply hold it in your hand with your eyes closed. That way you focus only on how it feels in your hand: is it comfortable, do you feel that you have control? Then read the specs to determine the quality of the blade, the handle, the overall construction. Professional chefs advise you not to get caught up in a knife’s appearance, but instead to focus both on the quality of materials and performance (is it well-balanced? does it have good edge retention? will it re-sharpen easily?).

This custom 9” chef’s knife is the epitome of great form and exquisite functionality, with a little bit of the “wow factor” thrown in just for good measure. Made in the U.S. by notable custom knifemaker and metalsmith Michael Zieba, owning this knife may cause you to never want to leave your kitchen—unless, of course, you are suddenly compelled to show a friend or colleague this flawless piece of cutlery. PLEASE NOTE: The steel blade is not stainless and if left wet (or in a high humidity environment) it will rust (take on a unique patina). If you are going to store this knife for a prolonged period you will want to wipe the blade with oil to protect it. In addition, highly acidic foods, such as tomatoes or lemons, will cause the blade to discolor. This is harmless. An added benefit of the 52100 steel is that this knife will remain sharp for months at a time without ever requiring a whetstone.
